{"id":956,"date":"2024-10-24T06:49:00","date_gmt":"2024-10-24T06:49:00","guid":{"rendered":"https:\/\/truffle.jp\/?p=956"},"modified":"2024-10-24T07:12:50","modified_gmt":"2024-10-24T07:12:50","slug":"homemade-tagliatelle-with-white-truffle","status":"publish","type":"post","link":"https:\/\/www.truffle.jp\/en\/homemade-tagliatelle-with-white-truffle\/","title":{"rendered":"Homemade tagliatelle with white truffle"},"content":{"rendered":"\n<h5 class=\"wp-block-heading\">Ingredients for two persons:<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>220 g homemade tagliatelle<\/li>\n\n\n\n<li>25 g butter<\/li>\n\n\n\n<li>1 egg (yolk)<\/li>\n\n\n\n<li>25 g Parmesan<\/li>\n\n\n\n<li>salt<\/li>\n\n\n\n<li>60 g of fresh white truffle<\/li>\n\n\n\n<li>1 cup of the water in which the pasta was cooked<\/li>\n\n\n\n<li>olive oil<\/li>\n<\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">Preparation:<\/h5>\n\n\n\n<p class=\"wp-block-paragraph\">Separate the egg yolk from the egg white. Place the yolk in a bowl, add the Parmesan cheese and stir. Grate some of the truffle on the side of a plate. Place the homemade pasta in a pot of boiling salted water and leave to cook for about 4-5 minutes. Meanwhile, melt the butter in a pan over a low heat. When the butter has melted slightly, add the grated truffle. Add salt, reduce the heat, add the egg yolks with the Parmesan cheese and a little of the water in which the pasta was cooked. Add the pasta and mix well. Add a little more water if necessary. Cook on a low heat for another minute. Finally, grate the rest of the fresh white truffle, drizzle with olive oil and serve on a plate.
